Introduction
β-Glucanase is a high-performance enzyme produced from a superior microbial strain through advanced submerged fermentation and modern downstream processing. It primarily contains endo-1,3(4)-β-glucanase, which efficiently hydrolyzes β-glucans present in plant materials into glucose and low molecular weight compounds. This process significantly reduces viscosity, improving processing efficiency in various industrial applications.
Working Principle
β-Glucan is a complex polysaccharide composed of β-(1,3) and β-(1,4) glucosidic linkages.
β-Glucanase specifically targets and breaks these linkages, converting high molecular weight β-glucans into smaller, more soluble polysaccharides. This enzymatic action:
